A natural pairing: butcher shop and deli

From lamb and pork crown roasts, country bacon and homemade sausages and burgers to thick, 60-day, wet-aged ribeye steaks, traditional butcher shops offer high-quality, unusual cuts of meats prepared on the premises with huge amounts of personal pride.

One such quality purveyor of everything meaty is family-run Carlisle’s Neighborhood Meat Market. Recently relocated and expanded to newer and larger premises, its butcher shop is now at 7635 Horse Lake Road in Brooksville.

Owned and operated by Elaine and Mitch Carlisle and new partners Mike and Kim Smith,  they have over 30 years of business experience. The group offers the best quality meats not normally found in supermarkets and with very competitive prices. All are USDA quality meats, natural and hormone free.

Mitch Carlisle is the epitome of a classic aproned butcher and he and everyone at Carlisle’s Neighborhood Meat Market are more than ready to help customers on choosing that special cut of meat and the best way to cook it.

“I want to be the butcher that customers can approach and get advice on cooking their crown roast of pork or prime rib,” said Carlisle.

Elaine Carlisle, his wife, is developing plans of her own to complement the meat market.

“Along with Gabriela (Gabby) Kennedy, a neighbour of mine, we wanted to venture into some type of female entrepreneur business so we’re planning to open our deli in the meat market,” Elaine said.

“There’s absolutely plenty of room for us to have a separate deli area,” said Elaine. “So we knocked down a partition wall and once the electrical work is finished, we can start moving in our display cases and equipment for the deli area,” she said. “It should all be complete in about a month.”

To introduce their venture, the pair has already been serving homemade Cubans on Saturdays. At $6 a piece, customers have been coming back for more. Starting this week, deli sandwiches and Cubans will be available Thursdays, Fridays and Saturdays.

“All of the meat we’ll use at the deli comes from right here in the meat market, said Gabby. “And we have the perfect outdoor seating area where customers can linger and enjoy their sandwiches.”

Gabby’s husband, Jimmy Kennedy also plays a part in getting this deli up and running.

“He helps us out on Saturdays and is our ‘Mr. Fixit’ around here,” said Gabby.

Elaine and Gabby plan to serve a whole variety of deli foods including Cubans, sandwiches, meatball subs, pasta salads, cheeses and a very special fish dip. All the ham, turkey and pork will come from the meat market.

“We want to keep it all in-house,” said Elaine. “We’ve been working on this project for a long time and have even developed our own secret, special recipes.”

Elaine and Gabby explained that people nowadays really care about what they’re eating and where it comes from.

“For example, we don’t just use sliced pork for our deli products,” said Elaine. “We cook the pork ourselves and pull it apart ourselves,” they said.

Whether it’s beef, pork, lamb, poultry or fish, Carlisle’s products are a cut above what is available at chain grocery stores.

If you just want to throw some burgers on a grill, get some ground beef from Carlisle’s. No need to bother with seasoning. The ground beef here is juicy, flavorful and it’s all made fresh every day.

The burgers and sausages are made fresh every morning. Burgers come in flavors of bacon, cheddar, sweet onion, western and bleu cheese flavors. Varieties of homemade sausages are Tuscan garlic, cherry, Italian, Jalapeño spicy and roasted pineapple.

Inside the meat market is spotlessly clean. Gleaming white, stainless steel display cabinets are bursting with a selection of beef prime cuts, pork, duck, chicken, top quality rashers of bacon, gourmet burger patties and handmade sausages of several different flavors.

Carlisle’s also offers a frozen selection of the more unusual meats that include venison, buffalo, elk, duck, gator, rabbit, quail, frog legs, and Ahi tuna and wild salmon, as well as all the supplies you need for your smoker or grill.

This butcher shop is becoming a one-stop shop; where shoppers can buy and order next month’s meat requirements, choose what’s for dinner tonight and linger for a deli lunch all at once.

”People are hungry for good-quality, old-fashioned homemade food,” Elaine says. “The secret to staying in business today is to offer the best you can and that’s what makes our customers come back again and again.”
