Boneless chicken breast (sliced thin)
Salt and Pepper to taste
1 cup flour
1 cup Seasoned Italian bread crumbs
Vegetable oil for frying
lemons cut into wedges
Use a dish for each, beaten eggs with salt and pepper, flour and another for bread crumbs.
Dip chicken in flour first, shake off excess, dip into eggs then into bread crumbs. Place on plate and start same on next piece. (note: do not stack on each other).
Heat oil in large pan, medium heat. Fry chicken until golden brown and no pink in center of chicken.
Note: use oven on est 200 to keep you done chicken warm until ready to serve.
Serve with lemon slice.
Hint: Could be served with Rice or Pasta w/sauce
